Winter is peaceful, authentic, and perfect for understanding the craft of winemaking.

Pruning is one of the most important tasks in the vineyard and takes place once a year during the winter months, when the vines are dormant. At this time, the plant has lost its leaves and rests after the harvest season.

During pruning, the grower carefully cuts back most of the previous year’s growth. This process helps control the shape and size of the vine, ensuring that it remains healthy and balanced. By removing excess branches, the plant can focus its energy on producing strong new shoots in the following spring.

Proper pruning is essential for the quality of the grapes. When the vine is pruned correctly, it produces fewer but better clusters, allowing the grapes to develop richer flavors and better balance.

This annual practice also prepares the vine for the next cycle of life. After the winter rest, the vine will begin to grow again in spring, producing new shoots, leaves, and eventually flowers that will become the grapes of the next harvest.
